Brinji Rice, Briyani Saatham, Brinji pulav

Ingredients:

  • Basmati rice - 2 cup
  • Coconut milk - 3 cups
  • Bread - 3 slices (cut into cubes)
  • Ghee - 1 tbsp
  • Cloves -  2
  • Cardamom - 2
  • Bay leaf - 1
  • Cinnamon stick - 1
  • Fennel seeds - 1/2 tsp
  • Ginger Garlic paste - 1/2 tsp
  • Green chilli - 4 (cut lengthwise)
  • Mint leaves - 1/4 cup
  • Coriander leaves - 1/4 cup
  • Onion - 2 (cut lengthwise)
  • Tomato - 3 (diced)
  • Chilli powder - 1 tsp
  • Turmeric powder - 1/4 tsp
  • Curd - 1 tsp
  • Oil - to fry
  • Salt - to taste

Recipe:

  1. Wash and Soak Basmati rice in Coconut milk for 5 min.
  2. Heat Ghee in a pan. Add Cloves, Cardamom, Bay leaf, Cinnamon, Fennel seeds, Ginger Garlic paste, Green Chilli, Mint leaves, Coriander leaves one by one and then mix well.
  3. Now add Onion, Tomato, Chilli powder, Turmeric powder, Salt, Curd and combine well.
  4. Then add rice Coconut milk mix and cook in cooker.
  5. Now fry Bread slices in Oil till it turns golden brown. Then add that slices to the cooked rice and mix well.

Goes well with: raita.
